Kimberley biscuits are a ginger cookie sandwich with sweet & soft marshmallow filling. The squishy center is rolled in crunchy sugar crystals and the sweetness pairs wonderfully with the spice of ginger. These treats are perfect on their own but go great with coffee and tea as well.
